Homemade Chutneys with a spoonful of mother's love !!
Ingredients:
2 Chicken Breasts – boneless & cleaned
Chutree Spicy Lemon Chutney – 3 tblsp
Onions – 2 large sliced
Natural Yoghurt – 2 tblsp
Ginger - 10g
Garlic – 3 cloves crushed
Red Chilli Powder – 1 tsp
Olive Oil – 2 tblsp
Lemon Juice – 1 tsp
Tomato puree – 2 tblsp
Salt – to taste
Method:
1) In a blender, add the crushed garlic, sliced ginger, Spicy Lemon chutney, sliced onion, yoghurt & red chilli powder and blend until a smooth consistency.
2) Transfer the marination from the blender into a zipper lock bag.
3) Wash and clean the chicken breasts, season lightly with salt and place into the zipper lock bag. Toss until the marination is evenly coated on the chicken.
4) Once complete, leave the chicken at room temperature for 2 hours until ready.
5) Pre-heat oven to 230 degrees C, place the chicken in the oven for 45-50min until the chicken is cooked thoroughly.
6) Take the chicken out and serve on a bed of fried rice or with salad.
7) Your Spicy Lemon Roast Chicken is ready to eat!
