Homemade Chutneys with a spoonful of mother's love !!
Ingredients:
Basmati Rice – 350g
Chutree Mint & Coriander Chutney – 2 tblsp
Mixed Vegetables (Carrots, Peas, Sweetcorn & Peppers) – 300g
Onion – 1 medium sized (sliced)
Ginger - 5g
Garlic – 2 cloves
Green Chilli paste – 1 tsp
Cumin Seeds – 1 tsp
Salt – to taste
Method:
1) Add the basmati rice in a bowl and wash well with water until the water is clear. Then leave to sock in water.
2) Wash and Chop all the Vegetables / Defreeze the frozen vegetables
3) Slice the Onion, Garlic and Ginger
4) In a saucepan add a little olive oil, cumin seeds, ginger, garlic and onion. Fry until the onion is transparent.
5) Then add the vegetables and green chilli paste and mix well.
6) Then add the rice with the water and add 200ml of water to ensure the rice is well covered.
7) Now add the Chutree Mint & Coriander chutney and mix well
8) Add Salt and cover to cook on high until boil.
9) Once it reaches a boil, leave it at a low heat for around 10 minutes until the rice is cooked.
10) Then Mint & Coriander Pilau is ready to Eat
